This course is a practical Skills Bootcamp preparing learners for skilled roles in seafood processing, with strong emphasis on food safety and HACCP principles. Learners will gain hands-on knife skills combined with essential food safety knowledge, ready for roles in the seafood processing industry.

  • Safe storage, handling, and cleaning procedures
  • Legal responsibilities and HACCP introduction
  • Fish-specific hazards and designing HACCP plans
  • Knife handling, sharpening, and safety
  • Anatomy and filleting techniques for round (e.g., cod) and flat fish (e.g., plaice)
  • Trimming, pin boning, skinning, yield analysis, and portion sizing
